Description

Ingredients

  • 500g (1.1lb) Beef Sirloin: cut into 2cm (¾-inch) pieces
  • 250g (½lb) Medium Pasta Shells
  • 2 Tbsp (30ml) Olive Oil
  • 2 Tbsp (30g) Unsalted Butter
  • 3 Cloves Garlic, Minced
  • 1 tsp (5g) Cajun Seasoning
  • 1 tsp (5g) Smoked Paprika
  • 150g (5oz) Cheddar Cheese (Halal-Certified)
  • 100g (3½oz) Mozzarella Shreds (Halal-Certified)
  • ½ cup (120ml) Heavy Cream
  • 1 Chipotle Pepper in Adobo, Minced (or ½ tsp Chipotle Powder)
  • Zest of 1 Lime
  • 2 Tbsp (30ml) Fresh Lime Juice
  • Salt and Pepper to Taste
  • 2 Tbsp (8g) Chopped Cilantro, Plus Extra for Garnish
  • 1 Tbsp (15ml) Olive Oil (Optional)

Instructions

  1. Cook Pasta: Boil shells until al dente, drain, and set aside.
  2. Season Steak: Toss steak with Cajun seasoning, paprika, salt, and pepper.
  3. Sear Steak: Sear steak in olive oil until browned, set aside.
  4. Sauté Garlic: Sauté minced garlic in butter until fragrant.
  5. Combine Pasta & Cheese: Add pasta to skillet, coat with garlic butter, and melt cheese.
  6. Return Steak: Add steak back to skillet and mix with cheese sauce.
  7. Prepare Crema: Simmer cream, chipotle, lime zest, and juice until thickened.
  8. Assemble & Finish: Pour crema over skillet, swirl, and cook for 2 minutes.
  9. Serve: Garnish with cilantro and serve immediately.

Notes

For a richer flavor, use high-quality cheddar and mozzarella. Don’t overcrowd the pan when searing the steak to ensure proper browning.
