- 500g (1.1lb) Beef Sirloin: cut into 2cm (¾-inch) pieces
- 250g (½lb) Medium Pasta Shells
- 2 Tbsp (30ml) Olive Oil
- 2 Tbsp (30g) Unsalted Butter
- 3 Cloves Garlic, Minced
- 1 tsp (5g) Cajun Seasoning
- 1 tsp (5g) Smoked Paprika
- 150g (5oz) Cheddar Cheese (Halal-Certified)
- 100g (3½oz) Mozzarella Shreds (Halal-Certified)
- ½ cup (120ml) Heavy Cream
- 1 Chipotle Pepper in Adobo, Minced (or ½ tsp Chipotle Powder)
- Zest of 1 Lime
- 2 Tbsp (30ml) Fresh Lime Juice
- Salt and Pepper to Taste
- 2 Tbsp (8g) Chopped Cilantro, Plus Extra for Garnish
- 1 Tbsp (15ml) Olive Oil (Optional)
Instructions
- Cook Pasta: Boil shells until al dente, drain, and set aside.
- Season Steak: Toss steak with Cajun seasoning, paprika, salt, and pepper.
- Sear Steak: Sear steak in olive oil until browned, set aside.
- Sauté Garlic: Sauté minced garlic in butter until fragrant.
- Combine Pasta & Cheese: Add pasta to skillet, coat with garlic butter, and melt cheese.
- Return Steak: Add steak back to skillet and mix with cheese sauce.
- Prepare Crema: Simmer cream, chipotle, lime zest, and juice until thickened.
- Assemble & Finish: Pour crema over skillet, swirl, and cook for 2 minutes.
- Serve: Garnish with cilantro and serve immediately.
Notes
For a richer flavor, use high-quality cheddar and mozzarella. Don’t overcrowd the pan when searing the steak to ensure proper browning.
