Description
This candied pecan recipe with Burnished Caramel Shell delivers a crisp, golden texture and rich aroma, transforming pecans into irresistible jewels that are perfect as a quick, family-friendly treat.
Ingredients
- 2 cups (200g) Large Pecan Halves, use fresh, high-quality for best crunch and flavor
- 1 cup (200g) Granulated Sugar, this forms the crisp Burnished Caramel Shell
- 0.25 cup (60ml) Water, helps dissolve sugar for the initial syrup
- 1 tablespoon (14g) Unsalted Butter, adds richness and prevents sticking
- 1 teaspoon (5ml) Vanilla Extract, enhances sweetness and aroma
- 0.25 teaspoon (1.5g) Salt, balances sweetness and highlights pecan flavor
Instructions
- Prepare Oven And Pan: Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- Combine Sugar And Water: In a large, heavy-bottomed skillet, combine 1 cup granulated sugar and 0.25 cup water. Bring to a boil over medium-high heat, stirring until sugar dissolves (about 2-3 minutes) and mixture is clear.
- Add Pecans And Crystallize: Stir in 2 cups pecan halves. Continue stirring constantly for 3-5 minutes until water evaporates and sugar crystallizes, coating pecans with a white, sandy layer.
- Caramelize Pecans: Reduce heat to medium-low. Keep stirring for another 5-7 minutes until crystallized sugar melts again, forming a golden brown, even caramel shell around each pecan.
- Finish With Butter And Vanilla: Remove skillet from heat. Quickly stir in 1 tablespoon unsalted butter and 1 teaspoon vanilla extract until well combined. Add 0.25 teaspoon salt.
- Bake And Cool: Spread warm candied pecans in a single layer on the prepared baking sheet. Bake for 10-15 minutes, stirring once halfway through, until deeply golden and fragrant. Cool completely on the baking sheet (at least 30 minutes) for crispness.
Notes
For best results, use a large non-stick skillet and have all ingredients measured before starting. Stir constantly during caramelization to prevent burning, and ensure complete cooling for a perfectly crisp shell. Walnuts or almonds can be substituted for pecans, and brown sugar can be used for a deeper flavor. Store finished candied pecans in an airtight container for lasting crunch.
