Description

This homemade iced caramel brulee latte cream recipe offers a cafe-quality indulgence for any time of day. It features a rich coffee base, creamy milk, caramel, vanilla, and a crunchy brulee topping, perfect as a pick-me-up or luxurious treat.

Ingredients

Scale
  • 0.5 cup (120 ml) strong coffee or espresso
  • 1 cup (240 ml) milk
  • 12 Tbsp (1530 ml) caramel sauce
  • 12 Tbsp (1530 ml) vanilla syrup or white chocolate sauce
  • 0.5 cup (120 ml) heavy cream
  • 12 tsp (510 g) granulated sugar
  • 12 cups ice

Instructions

  1. Brew Coffee: Prepare 1-2 shots of espresso or 0.5 cup of strong brewed coffee, aiming for a dark, rich color (3-5 minutes).
  2. Mix Base: In a tall glass, combine brewed coffee, 1-2 tablespoons of caramel sauce, and 1-2 tablespoons of vanilla or white chocolate syrup. Stir well until dissolved and fragrant.
  3. Add Milk and Ice: Fill the glass with 1-2 cups of fresh ice cubes, then pour in 1 cup of your preferred milk. Stir gently until cold and cloudy (about 10 seconds).
  4. Prepare Whipped Cream: In a cold bowl, whisk 0.5 cup heavy cream with 1 teaspoon of sugar until soft peaks form and it holds its shape (2-3 minutes).
  5. Create Brulee Topping: Spoon the whipped cream generously on top of your iced drink. Sprinkle a thin, even layer of granulated sugar over the whipped cream (about 1 level teaspoon).
  6. Brulee It: Carefully use a kitchen torch to melt and caramelize the sugar until it forms a hard, crackly, golden-brown shell (15-30 seconds). Move the flame constantly to avoid burning.
  7. Drizzle & Serve: Finish with an extra drizzle of caramel sauce over the brulee topping. Serve immediately and enjoy.

Notes

You can use strong brewed coffee or instant espresso powder instead of espresso shots. Any type of milk works for customization. For a healthier option, choose sugar-free caramel sauce or lower-fat milk alternatives. If using a kitchen torch for the brulee, move the flame constantly to ensure even browning and prevent burning the cream or sugar. Store-bought whipped cream can be used as a shortcut.
