- 115 g (1/2 cup) Unsalted Butter, melted
- 2 Large Eggs, room temperature
- 120 ml (1/2 cup) Whole Milk
- 1 tsp (5 ml) Alcohol-Free Vanilla Extract
- 300 g (2 cups) Apples, peeled, cored, diced
- 100 g (1 cup) Pecan Halves, toasted and coarsely chopped
- 200 g (1 cup) Packed Brown Sugar (for glaze)
- 60 ml (1/4 cup) Heavy Cream (for glaze)
- 60 g (1/4 cup) Unsalted Butter (for glaze)
- 1 tsp (5 ml) Fresh Orange Zest
- 1/4 tsp Ground Cardamom (for glaze)
- 1/2 tsp Sea Salt (for glaze)
Instructions
- Preheat & Prepare: Preheat oven to 180°C (350°F), grease & line a 23cm (9-inch) cake pan.
- Combine Dry Ingredients: Whisk flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Mix Wet Ingredients: Combine melted butter, eggs, milk, and vanilla extract.
- Combine Wet & Dry: Gently combine wet and dry ingredients until just incorporated.
- Fold in Apples & Pecans: Fold in diced apples and chopped pecans.
- Bake to Perfection: Pour into pan and bake for 35-40 minutes, until a toothpick comes out clean.
- Cool Completely: Cool in pan for 10 minutes, then on a wire rack.
- Make Caramel Glaze: Melt butter and brown sugar, dissolve completely.
- Emulsify & Simmer: Whisk in cream, butter, vanilla, orange zest, cardamom, and salt; simmer for 5-6 minutes.
- Glaze & Garnish: Drizzle warm glaze over cooled cake and garnish with pecans and orange zest.
Notes
For a more intense flavor, toast the pecans and use high-quality vanilla extract. Ensure the cake is completely cooled before glazing to prevent melting.
