Ingredients
- 2 lbs 80/20 ground beef
- 1 3.65 oz Carroll Shelby Chili Kit (chili spice packets, masa flour, cayenne)
- 1 28 oz can crushed tomatoes
- 1 8 oz can tomato sauce
- 1 large green bell pepper, diced (150g)
- 1 large red bell pepper, diced (150g)
- 1 jalapeño, seeded and minced (optional)
- 1 small poblano pepper, diced (optional)
- 1 large yellow onion, chopped (200g)
- 4 cloves garlic, minced (20g)
- 2 cups beef broth
Instructions
- Brown Meat And Aromatics: Heat a large, heavy-bottomed Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned and no pink remains, about 8-10 minutes. Drain any excess fat. Add the chopped onion, bell peppers, and minced garlic; cook until softened and fragrant, about 5-7 minutes.
- Add Spice Blend And Masa: Sprinkle the contents of the Carroll Shelby chili spice packets and masa flour over the browned meat and veggies. Stir well to coat everything, cooking for 1 minute until fragrant. (If it looks dry, add a splash of broth to prevent burning).
- Introduce Liquids And Simmer: Pour in the crushed tomatoes, tomato sauce, and beef broth. Stir thoroughly to combine all ingredients. Bring the mixture to a gentle simmer, stirring occasionally, about 5 minutes.
- Low And Slow Cooking: Reduce the heat to low, cover the pot, and let the chili simmer for at least 1-2 hours, stirring every 30 minutes, for the flavors to deeply meld and the chili to thicken.
- Adjust Seasoning And Serve: Taste the chili and adjust salt, pepper, or cayenne from the kit as needed. Serve hot with your favorite toppings.

For a richer taste, simmer chili for up to 3 hours. Use fresh, vibrant bell peppers and good quality ground meat for best flavor. To thicken chili, simmer uncovered or stir in 1 Tbsp masa flour (or cornstarch) mixed with 2 Tbsp cold water. To thin chili, add 0.5 cup more beef broth or water. Adjust spice with extra cayenne from the kit or hot sauce. Consider adding 15 oz (425g) can of kidney or pinto beans (drained/rinsed) for extra fiber, or 1 tsp cumin, 0.5 tsp chili powder, or 0.5 cup (75g) corn or diced carrots during the simmer for variations.
