Instructions

  1. Preheat & Prepare: Preheat oven to 175°C (350°F) and line a 20x20cm (8×8-inch) pan with parchment paper.
  2. Combine Dry Ingredients: Whisk together flour, sugars, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Mix Wet Ingredients: Beat eggs, oil, and vanilla, then stir in carrots.
  4. Combine Wet & Dry: Gradually combine wet and dry ingredients, mixing until just combined.
  5. Prepare Cream Cheese Swirl: Beat cream cheese and butter, then add powdered sugar, cardamom, orange juice, and zest.
  6. Layer & Swirl: Spread batter, drop swirl mixture, and gently swirl.
  7. Bake: Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Cool & Remove: Cool in pan for 15 minutes, then lift out and cool completely before glazing.

Notes
