- 1 lb rainbow carrots, trimmed and scrubbed
- 2 Tbsp unsalted butter
- 2 Tbsp maple syrup or honey
- 1 sprig fresh thyme or rosemary

- 0.25 tsp black pepper
- 1 tsp apple cider vinegar
Instructions
- Prep Carrots: Wash carrots thoroughly, peeling if desired, then slice into uniform 0.5-inch thick coins or sticks.
- Create Glaze: In a large 10-inch skillet, melt 2 Tbsp butter over medium heat until shimmering. Add maple syrup, fresh herbs, apple cider vinegar, salt, and pepper. Stir well until combined and aromatic (about 30 seconds).
- Sauté Carrots: Add prepared carrots to the skillet and toss to coat evenly. Cook, stirring occasionally, for 10-15 minutes until tender-crisp and the glaze has thickened and coated them. If the glaze becomes too sticky, add 1-2 Tbsp water or vegetable broth.
- Optional Finishing: Sprinkle fresh parsley or squeeze orange juice over the Glazed Rainbow Medley before serving.
