- 600g chicken breasts (2 large), trimmed and patted dry
- 150g red bell pepper, sliced
- 150g yellow bell pepper, sliced
- 50g onion, diced
- 2 cloves garlic, minced
- 200ml heavy cream
- 200g mozzarella cheese, shredded
- 30ml olive oil
- 5g smoked paprika
- 5g ground cumin
- 5g sea salt
- 1g black pepper
- 2 tbsp cilantro, chopped
- 2 tbsp parsley, chopped
- (Optional) ½ lemon zest
Instructions
- Prepare Oven & Chicken: Preheat oven to 200°C (400°F). Pat chicken dry.
- Season Chicken: Combine paprika, cumin, salt, and pepper; rub onto chicken.
- Sear Chicken: Sear chicken in 1 tbsp olive oil for 3 minutes per side. Transfer to baking dish.
- Sauté Vegetables: Sauté peppers, onion, and garlic in remaining olive oil until softened.
- Assemble Dish: Spread vegetables over chicken in baking dish.
- Add Cream & Cheese: Pour cream over vegetables and sprinkle with mozzarella.
- Bake to Perfection: Bake for 20-25 minutes, until cheese is bubbly and chicken reaches 74°C (165°F).
- Rest & Serve: Let rest for 5 minutes before serving.
Notes
For even cooking, ensure chicken breasts are of similar thickness. Using a meat thermometer guarantees the chicken is cooked through.
