This Cheesy Taco Casserole with Ground Beef is a satisfying, family-friendly, and budget-conscious dinner, perfect for busy weeknights.
Ingredients
Scale
- 1 lb lean ground beef (80/20)
- 1 packet (28 g) taco seasoning
- 0.5 cup water
- 1 cup vibrant salsa
- 2 cups (225 g) shredded cheddar or a Mexican cheese blend
- 12 small corn tortillas or 6 oz (170 g) tortilla chips
Instructions
- Brown Your Ground Beef: Cook 1 lb ground beef in a large skillet over medium-high heat until no longer pink. Drain fat. Stir in 1 packet taco seasoning, 0.5 cup water; simmer 2-3 minutes until thickened.
- Assemble Your Casserole: Preheat oven to 375°F (190°C). In a 9×13 inch baking dish, spread salsa. Layer half tortillas/chips, half seasoned beef, half salsa, 1 cup cheese. Repeat layers. (If it looks dry, add 1-2 Tbsp water.)
- Bake to Perfection: Bake the casserole until golden brown, bubbly, and cheese is melted (25-30 minutes). Let it rest 5 minutes for easier serving.
Notes
For faster prep, use pre-cooked beef, pre-shredded cheese, and jarred salsa. For a gluten-friendly option, use certified gluten-free corn tortillas or chips.
