This homemade Polynesian sauce recipe offers a tropical twist on the classic Chick-fil-A version, perfect for dipping chicken tenders or drizzling over rice bowls for easy weeknight meals.

- 0.25 cup light brown sugar, packed
- 0.25 cup unseasoned rice vinegar
- 2 tablespoons low-sodium soy sauce (or gluten-free tamari)

- 0.25 cup fresh passion fruit pulp, including seeds (from approximately 3–4 passion fruits)
- 0.5 teaspoon ground green cardamom
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 1 teaspoon fresh ginger, finely grated, for garnish
Instructions
- Combine Ingredients: In a medium saucepan, add the pineapple juice, brown sugar, rice vinegar, soy sauce, 1 tablespoon of grated ginger, minced garlic, passion fruit pulp, and ground cardamom. Whisk gently to combine.
- Simmer the Sauce: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low and cook for 5 minutes, allowing flavors to meld together.
- Prepare Cornstarch Slurry: In a separate small bowl, combine the cornstarch and cold water. Whisk together thoroughly until smooth to create a slurry with no lumps.
- Thicken the Sauce: While continuously whisking, pour the cornstarch slurry slowly into the simmering sauce mixture. Increase the heat slightly to medium-low and continue to whisk gently for 1-2 minutes until the sauce thickens and achieves a glossy finish that coats the back of a spoon.
- Cool and Chill: Remove the saucepan from the heat and allow the sauce to cool completely to room temperature. Transfer to an airtight container and refrigerate for at least 1 hour before serving to fully develop flavors.
- Garnish and Serve: Spoon the chilled sauce into a dipping bowl. Sprinkle the remaining finely grated fresh ginger onto the surface of the sauce just before serving.
Notes
To achieve the right consistency, whisk in another 0.5 tablespoon of cornstarch mixed with cold water if the sauce doesn’t thicken after 2 minutes. For a gluten-free option, substitute tamari for the soy sauce. Store leftover sauce in an airtight container in the refrigerator for up to 5 days.
