Instructions

  1. Prep Chicken: Cut 1.5 lbs (680g) chicken into 1-inch pieces. Season with salt, pepper, and Italian seasoning until well coated.
  2. Sear Chicken: Heat 1 Tbsp olive oil and 1 Tbsp butter in a large 10-inch skillet over medium-high heat. Add chicken and sear for 5-7 minutes until golden brown and cooked through. Remove chicken to a plate.
  3. Sauté Garlic: Add 1 Tbsp butter to the skillet. Sauté 3-4 cloves minced garlic for 1 minute until fragrant.
  4. Deglaze Skillet: Pour in 1.5 cups chicken broth. Bring to a gentle simmer, scraping up all browned bits from the bottom.
  5. Add Pasta: Place 12 oz dry fettuccine into the skillet, ensuring noodles are mostly submerged in broth.
  6. Cook Pasta: Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10-12 minutes, stirring occasionally until pasta is al dente. If pasta looks dry, add a splash of broth.
  7. Create Alfredo Sauce: Stir in 2 cups heavy cream and 1 cup grated Parmesan. Cook gently 2-3 minutes, stirring constantly until the sauce thickens and coats a spoon. Do not boil.
  8. Combine and Serve: Return cooked chicken to the skillet. Toss everything together until chicken is coated and heated through. Taste and adjust seasoning as needed. Garnish with fresh parsley if desired.
