- 1.5 lbs boneless, skinless chicken breast, thinly sliced
- 8 slices Provolone or American cheese (0.375 lb or 6 oz)
- 2 large bell peppers (0.66 lb or 300 g total), thinly sliced, any color
- 1 large onion (0.44 lb or 200 g), thinly sliced
- 4–6 sturdy hoagie rolls
- 2 tablespoons olive oil
- Salt, to taste

- A few tablespoons Fire-Roasted Salsa, for serving (optional)
- 1–2 tablespoons chicken broth, if needed, for chicken tenderness (optional)
Instructions
- Prep Ingredients: Thinly slice chicken breast against the grain for uniform thickness. Chop bell peppers and onion into thin strips. Have cheese slices ready nearby.
- Sauté Veggies: Heat a large 10-inch skillet over medium-high heat. Add 1 tablespoon of olive oil, then the sliced bell peppers and onions. Cook, stirring occasionally, until they soften and begin to caramelize, developing a rich, sweet aroma. Remove them from the pan and set aside in a bowl.
- Cook Chicken: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the chicken strips, season with salt and pepper, and cook until no longer pink and lightly browned, stirring to break up any large pieces. If the chicken looks dry, splash in 1-2 tablespoons of chicken broth to keep it tender.
- Combine And Melt: Return the sautéed vegetables to the skillet with the cooked chicken. Mix well to combine flavors. Arrange the cheese slices over the mixture, then cover the skillet briefly (about 1-2 minutes) to let the cheese melt into gooey perfection.
- Assemble And Serve: While the cheese melts, lightly warm your hoagie rolls. Spoon the cheesy chicken and veggie mixture generously into the warmed hoagie rolls. Serve immediately with a side of Fire-Roasted Salsa.

For convenience, use pre-sliced chicken or frozen bell pepper strips. Consider adding chopped mushrooms with the peppers and onions. For a healthy, low-carb option, serve the filling over fresh lettuce or in bell pepper ‘boats’ instead of rolls.
