- 4 cups corn kernels (600g), fresh or frozen
- 3 Tbsp (42g) unsalted butter
- 2 Tbsp (30ml) honey
- 1 tsp (2g) chipotle powder
- 1 lime, zested and juiced
- ½ tsp (2g) kosher salt
- ¼ tsp (1g) black pepper
- 2 Tbsp (20g) toasted pumpkin seeds
- 1 Tbsp (5g) chopped cilantro
Instructions
- Prepare Corn: Slice kernels from corn cobs or thaw/dry frozen corn.
- Sear Corn: Melt 2 Tbsp butter in a skillet, add corn, and season with salt and pepper.
- Develop Char: Cook corn for 6-8 minutes, stirring occasionally, until browned.
- Make Sauce: Melt 1 Tbsp butter, whisk in honey, chipotle, lime zest, and juice.
- Glaze & Caramelize: Toss corn with sauce, cook 2 minutes, stirring constantly.
- Garnish & Serve: Sprinkle with pumpkin seeds and cilantro.
Notes
For best results, use fresh corn when in season. Toast pumpkin seeds to enhance their flavor. Adjust chipotle powder to control spice level.
