Description

  • 3 Tbsp (42g) unsalted butter
  • 2 Tbsp (30ml) honey
  • 1 tsp (2g) chipotle powder
  • 1 lime, zested and juiced
  • ½ tsp (2g) kosher salt
  • ¼ tsp (1g) black pepper
  • 2 Tbsp (20g) toasted pumpkin seeds
  • 1 Tbsp (5g) chopped cilantro

Instructions

  1. Prepare Corn: Slice kernels from corn cobs or thaw/dry frozen corn.
  2. Sear Corn: Melt 2 Tbsp butter in a skillet, add corn, and season with salt and pepper.
  3. Develop Char: Cook corn for 6-8 minutes, stirring occasionally, until browned.
  4. Make Sauce: Melt 1 Tbsp butter, whisk in honey, chipotle, lime zest, and juice.
  5. Glaze & Caramelize: Toss corn with sauce, cook 2 minutes, stirring constantly.
  6. Garnish & Serve: Sprinkle with pumpkin seeds and cilantro.

Notes

For best results, use fresh corn when in season. Toast pumpkin seeds to enhance their flavor. Adjust chipotle powder to control spice level.
