  • 500g (1 lb) Beef Sirloin, thinly sliced
  • 200g (1 cup) Long-Grain White Rice, rinsed
  • 2 tbsp (30g) Unsalted Butter
  • 2 tbsp (30ml) Olive Oil (plus 1 tbsp for Cilantro Oil)
  • 4 Cloves Garlic, minced
  • 1 Medium Onion, diced
  • 600ml (2.5 cups) Low-Sodium Vegetable Broth
  • 200ml (0.75 cup) Whole Milk
  • 100g (3.5 oz) Sharp Cheddar Cheese, grated
  • 50g (1.75 oz) Parmesan Cheese, grated
  • 1 tsp (5g) Chipotle Powder
  • 0.5 tsp (2.5g) Smoked Paprika
  • 0.5 tsp (2.5g) Ground Cumin
  • Salt and Pepper, to taste
  • 1 tbsp (15ml) Lime Juice (optional)
  • 2 tbsp (8g) Toasted Cumin Seeds
  • 2 tbsp (8g) Chopped Cilantro
  • 0.25 cup (≈10g) Cilantro Oil (Cilantro & Olive Oil Blend)

Instructions

  1. Make Cilantro Oil: Blend cilantro and olive oil, then strain.
  2. Sauté Aromatics: Sauté garlic and onion in butter until softened.
  3. Brown Beef: Brown beef with cumin, salt, and pepper.
  4. Toast Rice: Toast rice in skillet with buttery aromatics.
  5. Simmer Rice: Add broth, bring to boil, then simmer covered for 12-15 minutes.
  6. Make Cheese Sauce: Melt cheddar and parmesan in milk.
  7. Infuse Sauce: Stir in chipotle powder, paprika, cumin, and lime juice.
  8. Combine & Swirl: Return beef to skillet, fold in sauce, and swirl.
  9. Plate & Garnish: Transfer to plate, swirl sauce, drizzle oil, and sprinkle with cumin and cilantro.

Notes

For a vibrant swirl, use the back of a spoon to create a ribbon of sauce across the skillet. Thinly slicing the beef against the grain ensures tenderness.
