Instructions

  1. Prep the oven: Preheat to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
  3. Cream butter and sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy, 2–3 minutes.
  4. Incorporate eggs and flavorings: Add eggs one at a time, mixing well after each. Stir in vanilla and flavor boosts if using.
  5. Combine wet and dry: Gradually mix dry ingredients into wet until just combined. Avoid overmixing.
  6. Fold in add-ins: Stir in chocolate chips or other add-ins.
  7. Scoop and shape: Use a cookie scoop to portion dough, placing 2 inches apart on sheets.
  8. Bake: Bake for 8–12 minutes until edges set but centers look soft.
  9. Cool: Rest on sheet for 5 minutes, then transfer to wire rack.
