Description

This easy chocolate covered strawberries recipe is an elegant, homemade dessert, perfect for busy families or a thoughtful last-minute treat that feels fancy without hours in the kitchen.

Ingredients

Scale
  • 450 g fresh strawberries, medium to large size, washed and thoroughly dried with stems intact
  • 300 g good quality dark chocolate (60-70% cacao), finely chopped
  • 50 g good quality white chocolate, finely chopped
  • 0.5 teaspoon ground green cardamom powder
  • 0.5 teaspoon alcohol-free vanilla extract
  • 1 tablespoon freeze-dried rose petals, finely crushed into a powder

Instructions

  1. Prep Your Berries: Line a baking sheet with parchment paper or a silicone mat. Ensure all strawberries are completely dry by gently patting them with paper towels.
  2. Melt Dark Chocolate: Place the chopped dark chocolate in a heatproof bowl. Create a double boiler by setting the bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water. Stir gently for 5-7 minutes until the chocolate is fully melted and smooth, with a glossy sheen. Remove from heat.
  3. Flavor Dark Chocolate: Stir 0.25 teaspoon of ground green cardamom powder and the alcohol-free vanilla extract into the melted dark chocolate until well combined and fragrant.
  4. Dip and Swirl Strawberries: Holding each strawberry by the stem, dip it into the melted dark chocolate, rotating to coat about two-thirds of the berry. Lift, letting excess chocolate drip back into the bowl, then gently scrape the very bottom edge against the rim to remove any remaining drips. Place the dipped strawberry onto the prepared baking sheet.
  5. Set Dark Chocolate: Repeat with the remaining strawberries. Transfer the baking sheet to the refrigerator for 15-20 minutes, or until the dark chocolate is firm to the touch.
  6. Prepare Drizzle and Dust: While the dark chocolate sets, melt the white chocolate using the same double boiler method or in a microwave in 15-second intervals, stirring until smooth and fluid. Combine the remaining 0.25 teaspoon ground green cardamom powder with the finely crushed freeze-dried rose petal powder in a small bowl.
  7. Drizzle and Chill Again: Once the dark chocolate on the strawberries is firm, transfer the melted white chocolate into a small piping bag or a zip-top bag with a tiny corner snipped off. Drizzle fine zig-zag patterns over the dark chocolate-covered portion. Return them to the refrigerator for another 5-10 minutes to set the white chocolate until it’s no longer tacky.
  8. Serve with Dust: To serve, arrange the chocolate covered strawberries on a serving platter. Lightly dust the cardamom-rose powder mixture over and around the strawberries, creating a delicate, aromatic finish.

Notes

To ensure a smooth, professional-looking coating, melt your chocolate slowly over low heat. Avoid leaving your chocolate covered strawberries in the fridge for too long after they are firm; let them sit at room temperature for 5-10 minutes before serving for optimal flavor.
