chocolate icing recipe Glossy Cocoa Drip
- Total Time: 15 minutes
- Yield: 1.5–2 cups (12–16 servings) 1x
- Diet: General (Can be Vegan)
Description
This chocolate icing recipe, Glossy Cocoa Drip, delivers a stunning, mirror-smooth shine and deep cocoa aroma, elevating any dessert. It is an easy, family-friendly recipe perfect for transforming ordinary treats into showstoppers.
Ingredients
- 0.5 cup (113g) unsalted butter, (Swap for margarine or dairy-free butter for a vegan chocolate icing recipe)
- 0.5 cup (48g) unsweetened cocoa powder
- 3–4 cups (360-480g) powdered sugar, sifted
- 0.25 cup (60ml) milk or cream, (Use water or plant-based milk like oat for lighter texture)
- 1 tsp (5ml) vanilla extract
- 0.125 tsp (0.6g) salt
Instructions
- Melt Butter: In a small saucepan over low heat, melt 0.5 cup (113g) unsalted butter until just liquid and clear, about 3 minutes. (Alternatively, microwave for 30-45 seconds).
- Sift Dry Ingredients: In a medium bowl, whisk together 0.5 cup unsweetened cocoa powder and 3-4 cups powdered sugar. Sifting ensures a smooth consistency.
- Combine Ingredients: Pour the melted butter into the dry ingredients. Stir well with a sturdy spoon until just combined.
- Adjust Consistency: Slowly whisk in 0.25 cup milk or cream, 1 tsp vanilla extract, and 0.125 tsp salt. Add more milk or cream (1 tsp at a time) or powdered sugar (1 Tbsp at a time) until a desired pourable yet thick and smooth consistency is reached (this may take 2-3 minutes of whisking). (A stand mixer can be used for 1-2 minutes).
Notes
Homemade icing lasts 3-4 days refrigerated. Always sift powdered sugar and cocoa powder to avoid lumps. Adjust consistency by adding more liquid (1 tsp at a time) or powdered sugar (1 Tbsp at a time).
