Instructions
- Prepare Pie Crust: If not already pre-baked, blind bake a 9-inch pie crust at 375(deg)F (190(deg)C) for 15-20 minutes until golden brown to prevent sogginess.
- Make Chocolate Filling: In a 2-quart saucepan, whisk together milk, 0.75 cups of the sugar, cocoa powder, cornstarch, and egg yolks over medium heat. Cook, stirring constantly, for 8-10 minutes until very thick and it coats the back of a spoon. Remove from heat and stir in chocolate, butter, and vanilla until smooth and glossy.
- Prepare Meringue: In a clean, dry large bowl, beat egg whites with cream of tartar using an electric mixer until soft peaks form (2-3 minutes). Gradually add the remaining 0.5 cups of sugar, one tablespoon at a time, beating until stiff, glossy peaks form and sugar is dissolved (5-7 minutes).
- Assemble and Bake Pie: Pour the hot chocolate filling into the pre-baked pie crust. Spread meringue over the hot chocolate filling, sealing completely to the crust edges. Bake for 12-15 minutes at 350(deg)F (175(deg)C) until golden brown.

Use high-quality cocoa or chocolate chips and fresh eggs for best results. For dairy-free, use almond milk and dairy-free butter. For gluten-free, use a GF pie crust.
