- 150g cheddar cheese, shredded (halal-certified)
- 100g mozzarella cheese, shredded (halal-certified)
- 4 large flour tortillas
- 100g plain Greek yogurt
- 0.5 cup cilantro leaves and stems
- 2 tbsp lime juice
- 1 tsp honey (optional)
- 0.25 cup toasted pumpkin seeds
- Extra cilantro leaves for garnish
Instructions
- Marinate Chicken: Combine sliced chicken with olive oil, garlic, salt, and pepper.
- Cook Chicken: Cook marinated chicken in a skillet until golden brown and cooked through. Rest for 5 minutes.
- Make Cilantro-Lime Cream: Blend Greek yogurt, cilantro, lime juice, salt, and honey (if using) until smooth.
- Combine Cheeses: Mix cheddar, mozzarella, and 2 tbsp cilantro-lime cream.
- Assemble Wraps: Spread cheese mixture on a tortilla, leaving a border.
- Add Chicken & Roll: Add chicken and roll tightly.
- Grill Wraps: Grill each side until golden brown and cheese is melted.
- Slice & Serve: Slice wraps diagonally.
- Garnish & Enjoy: Drizzle with remaining cream, sprinkle with pumpkin seeds and cilantro.
