  • 200g (1 cup) long-grain rice
  • 480ml (2 cups) water
  • 1 tsp salt (for rice)
  • 400g (15oz) canned black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup (150g) corn kernels
  • 120ml (½ cup) sour cream or Greek yogurt
  • 1 Tbsp chipotle powder (for crema)
  • 1 tsp lime zest
  • 1 Tbsp lime juice (for crema)
  • 1 tsp honey
  • 2 radishes, thinly sliced
  • 2 Tbsp toasted pumpkin seeds
  • Lime wedges

Instructions

  1. Marinate Steak: Combine orange juice, lime juice, olive oil, garlic, cumin, paprika, chipotle powder, salt, and pepper. Marinate steak for 20-30 minutes.
  2. Cook Rice: Rinse rice, then cook with water and salt until tender. Fluff with a fork.
  3. Grill Steak: Sear steak strips for 2-3 minutes per side, until medium-rare. Rest for 5 minutes, then slice.
  4. Sauté Vegetables: Sauté bell pepper, onion, and corn until softened.
