- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt until well-combined.
- Mix Dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the sweetened shredded coconut. If the dough feels too soft, chill it for 15 minutes.
- Scoop & Flatten Dough: Drop rounded tablespoons of dough onto the prepared baking sheets. Slightly flatten each cookie for a chewier texture.
- Bake Cookies: Bake for 12-15 minutes, or until the edges are golden brown and the centers are set but still soft. Allow the cookies to cool on the baking sheets for a few minutes to firm up, then transfer them to a wire rack to cool completely.
