  • Fresh mint leaves, for plating (optional)

Instructions

  1. Prepare Pineapple: Peel and cut pineapple into 1-inch rings; pat dry.
  2. Set Up Breading: Combine coconut, panko, flour, salt, and sugar; beat eggs separately.
  3. Coat Pineapple: Dredge in flour, dip in egg, then press into coconut mixture.
  4. Heat Oil: Heat coconut oil to 175°C (350°F).
  5. Fry in Batches: Fry rings for 2-3 minutes per side until golden brown.
  6. Keep Warm: Transfer to a wire rack in a 120°C (250°F) oven.
  7. Make Glaze: Warm honey, lime juice, zest, and cayenne.
  8. Glaze & Garnish: Drizzle glaze over pineapple; garnish with coconut and mint.
