Description

  • 300g (10oz) chicken breast, sliced
  • 2 Tbsp (30ml) olive oil
  • 1 tsp (5g) salt
  • 0.5 tsp (2g) black pepper
  • 3 Tbsp (45g) peanut butter
  • 60ml (1/4 cup) coconut milk
  • 30ml (2 Tbsp) lime juice
  • 15ml (1 Tbsp) soy sauce (halal)
  • 15ml (1 Tbsp) honey
  • 5ml (1 tsp) ginger, grated
  • 1 clove garlic, minced
  • 4 large flour tortillas (8-inch)
  • 25g (1/4 cup) toasted coconut flakes
  • 30g (2 Tbsp) cilantro, chopped
  • Optional: 0.5 avocado, sliced

Instructions

  1. Prepare the Sauce: Combine peanut butter, coconut milk, lime juice, soy sauce, honey, ginger, and garlic; whisk until smooth.
  2. Cook the Chicken: Sauté chicken strips in olive oil with salt and pepper until cooked through (5-6 minutes).
  3. Combine & Simmer: Coat chicken with sauce and simmer for 2-3 minutes until thickened.
  4. Warm Tortillas: Warm tortillas in a dry skillet for 20 seconds per side.
  5. Assemble Wraps: Fill tortillas with chicken mixture, cilantro, and coconut flakes; add avocado if desired.
  6. Roll & Slice: Roll tightly and slice wraps diagonally.
  7. Plate & Garnish: Arrange wraps and drizzle with extra sauce; garnish with coconut and cilantro.

Notes
