- 300g (10oz) chicken breast, sliced
- 2 Tbsp (30ml) olive oil
- 1 tsp (5g) salt
- 0.5 tsp (2g) black pepper
- 3 Tbsp (45g) peanut butter
- 60ml (1/4 cup) coconut milk
- 30ml (2 Tbsp) lime juice
- 15ml (1 Tbsp) soy sauce (halal)
- 15ml (1 Tbsp) honey
- 5ml (1 tsp) ginger, grated
- 1 clove garlic, minced
- 4 large flour tortillas (8-inch)
- 25g (1/4 cup) toasted coconut flakes
- 30g (2 Tbsp) cilantro, chopped
- Optional: 0.5 avocado, sliced
Instructions
- Prepare the Sauce: Combine peanut butter, coconut milk, lime juice, soy sauce, honey, ginger, and garlic; whisk until smooth.
- Cook the Chicken: Sauté chicken strips in olive oil with salt and pepper until cooked through (5-6 minutes).
- Combine & Simmer: Coat chicken with sauce and simmer for 2-3 minutes until thickened.
- Warm Tortillas: Warm tortillas in a dry skillet for 20 seconds per side.
- Assemble Wraps: Fill tortillas with chicken mixture, cilantro, and coconut flakes; add avocado if desired.
- Roll & Slice: Roll tightly and slice wraps diagonally.
- Plate & Garnish: Arrange wraps and drizzle with extra sauce; garnish with coconut and cilantro.
Notes
Toasting the coconut flakes enhances their flavor. Adjust sauce seasonings to your preference.
