Description
This easy corn bake recipe is a hearty side dish featuring a golden crust and creamy interior, quick to prepare and perfect for various occasions.
Ingredients
- 15 oz canned whole kernel corn, well-drained
- 15 oz canned creamed corn
- 0.5 cup sour cream
- 4 tablespoons unsalted butter, melted
- 2 cups cornbread mix
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- Combine Ingredients: In a large mixing bowl, whisk together the drained whole kernel corn, creamed corn, sour cream, melted butter, and cornbread mix until just blended. Do not overmix.
- Bake Corn Bake: Pour the corn mixture into the prepared dish. Bake for 45-55 minutes, until the top is golden brown and the center is set (a toothpick should come out clean).
- Add Optional Cheese Topping: For an extra cheesy corn bake, sprinkle shredded cheese over the top during the last 10 minutes of baking, allowing it to melt into a bubbly, golden crust.
Notes
Avoid overmixing ingredients. For gluten-free, use a certified gluten-free cornbread mix. For dairy-free, use vegan sour cream or plant-based yogurt and butter, and optionally vegan cheese. For a spicy version, add 1-2 diced jalapenos or cayenne pepper. For a lighter version, use light sour cream or Greek yogurt and reduce butter or substitute with unsweetened applesauce. Fresh or frozen corn (3-4 cups) can be used in place of canned whole kernel corn. Minimal cleanup with one-bowl preparation.
