Instructions

  1. Prepare the Steak: Pat cube steaks dry thoroughly with paper towels. Season generously on both sides with salt, pepper, garlic powder, and onion powder until they look evenly coated.
  2. Dredge the Steak: Set up two shallow dishes. Fill one with buttermilk; in the second, whisk seasoned flour. Dip each steak in buttermilk, then press into the flour for a full, even coating.
  3. Fry the Steaks: Heat 2 Tbsp high-heat oil and 1 Tbsp butter in a large 10-inch cast-iron skillet over medium-high heat until shimmering (2-3 min). Fry steaks 3-4 minutes per side until golden brown and cooked; work in batches as needed.
  4. Make the Roux: Remove cooked steaks to a plate, keeping them warm. Drain excess oil, leaving about 2 Tbsp drippings. Add remaining 3 Tbsp butter to the skillet and melt. Stir in 0.5 cup flour, cooking 1-2 minutes until a lightly golden paste forms, scraping up flavorful bits.
  5. Build the Gravy: Slowly whisk in 2 cups of milk, pouring gradually and stirring constantly to prevent lumps.
