Ingredients
- 1 lb ground beef sausage

Instructions
- Prepare Biscuits: Gather all ingredients. If using canned biscuits, preheat oven to 375°F (190°C) and bake them until golden brown (12-15 minutes).
- Brown Beef Sausage: In a sturdy 10-inch skillet over medium-high heat, crumble and cook the ground beef sausage until no longer pink and nicely browned with crisp edges. Drain excess grease.
- Create Roux: Add 2 tablespoons butter to the pan with the cooked sausage and melt until shimmering. Stir in 0.25 cup all-purpose flour, cooking and stirring constantly for 1-2 minutes until a thick, golden, slightly nutty paste forms (add 1-2 tablespoons more butter or oil if too dry).
- Whisk In Milk: Slowly pour in 2 cups milk, a little at a time, continuously whisking into the roux and sausage. Continue whisking gently as it heats until the gravy thickens to a creamy consistency (coating the back of a spoon).
- Season And Serve: Season gravy generously with 0.5 teaspoon each of salt and black pepper. Taste and adjust seasoning as needed. Serve immediately over freshly baked, warm biscuits.
