- 60g unsalted butter, browned

- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp dried oregano
- 1 small jalapeño, seeded & chopped (optional)
- Zest and juice of 1 lemon
- 120ml low-sodium vegetable broth
- 30g grated Parmesan cheese
- 2 Tbsp chopped fresh parsley
- 1 tsp toasted almond slivers
- Flaky sea salt and cracked black pepper
Instructions
- Prepare Chicken: Season chicken with salt and pepper.
- Cook Pasta: Boil and cook pasta al dente; drain and drizzle with oil.
- Blanch Broccoli: Blanch broccoli, shock in ice water, and drain.
- Sear Chicken: Sear chicken in olive oil until cooked through.
- Craft Sauce: Sauté garlic and spices in butter.
- Build Base: Add lemon zest, juice, and broth; simmer.
- Combine & Coat: Return chicken, add pasta and broccoli; toss to coat.
- Rest & Finish: Let rest for 2 minutes.
- Plate & Garnish: Plate, garnish with Parmesan, parsley, almonds, salt, pepper, and lemon zest.
Notes
Browning the butter creates a nutty, rich flavor. Blanching broccoli preserves its color and texture. Adjust jalapeño for desired spice level.
