Description

These Cranberry Brie Bites with Flaky Puff Pastry are a delightful appetizer, featuring crispy, golden edges and a creamy, warm center with sweet-tart flavor, perfect for any gathering.

Ingredients

Scale
  • 1 sheet (14 oz) frozen puff pastry
  • 4 oz brie cheese, rind on, cubed into 0.5-inch pieces
  • 0.5 cup (120 g) canned whole berry cranberry sauce
  • 1 large egg, for egg wash
  • 1 Tbsp water, for egg wash
  • small sprig fresh rosemary or thyme, optional
  • chopped nuts (pecans or walnuts), optional

Instructions

  1. Thaw Puff Pastry: Gently unfold the pastry sheets at room temperature for 20-30 minutes until pliable.
  2. Preheat Oven & Prep Pan: Set your oven to 400°F (200°C). Line a 24-cup mini muffin tin with parchment liners or spray lightly with non-stick spray.
  3. Cut Puff Pastry: Unroll the pastry sheets onto a lightly floured surface. Cut each sheet into 12 squares (approximately 2×2 inches / 5×5 cm). If the pastry squares tear, gently pinch the edges back together to seal.
  4. Fill Muffin Tin: Carefully press each pastry square into a mini muffin cup, forming a small well. Ensure the corners extend slightly above the cup edges.
  5. Add Brie and Cranberry: Place one small cube (about 0.5-inch / 1.25 cm) of brie cheese into each pastry cup. Top with about 0.5 teaspoon of whole berry cranberry sauce, ensuring even distribution.
  6. Egg Wash & Bake: Whisk the large egg with a tablespoon of water for an egg wash. Brush the edges of the pastry with this wash. Bake for 12-15 minutes, or until the pastry is visibly puffed, golden brown, and the brie is melted and bubbly.
  7. Cool and Serve: Let cool in the muffin tin for 5 minutes until they firm up. Carefully remove them to a wire rack. Serve warm for the best taste.

Notes

For variations, swap fresh cranberries (1 cup) cooked with sugar (2 Tbsp) and water (1 Tbsp) for the sauce. Add fresh rosemary or thyme, or chopped nuts (pecans, walnuts) for crunch. For dietary needs, use gluten-free puff pastry or plant-based puff pastry with a vegan brie alternative. Ensure proper thawing for pastry, use a lightly floured surface and well-greased tin to prevent sticking. Confirm oven temperature if brie isn’t melting.
