This no-cook cranberry orange relish offers a vibrant, sweet, and zesty burst of flavor, perfect for quickly elevating any meal with its family-friendly and healthy profile.

- 450 g (3 cups) fresh cranberries, rinsed
- 2 large (approx 400 g) navel oranges, scrubbed
- 200 g (1 cup) granulated sugar
- 60 g (0.5 cup) raw shelled pistachios
- 5 mL (1 teaspoon) pure rosewater
- 1.25 mL (0.25 teaspoon) ground cardamom
- 10–12 fresh mint leaves, for garnish
Instructions
- Toast Pistachios: Preheat a dry skillet over medium-low heat. Add raw shelled pistachios and toast, stirring frequently, until fragrant and lightly golden (5-7 minutes). Transfer them immediately to a plate to cool completely, then roughly chop.
- Prep Oranges: Zest one of the oranges entirely using a fine grater. Then, carefully peel both oranges, removing all white pith. Roughly chop the peeled orange flesh into bite-sized pieces.
- Combine & Pulse: In a food processor, combine the fresh cranberries, orange zest, and chopped orange flesh. Pulse the mixture until it’s finely chopped but still retains some texture; avoid over-processing into a smooth puree. (If it looks too watery, pulse in a few more cranberries to thicken the consistency slightly.)
- Flavor the Relish: Transfer the cranberry-orange mixture to a medium bowl. Stir in the granulated sugar, pure rosewater, and ground cardamom until everything is well combined and the sugar begins to dissolve.
- Chill & Meld: Cover the bowl and refrigerate the relish for at least 2 hours, or preferably overnight. This allows the beautiful flavors to meld deeply and the sugar to fully dissolve, creating a richer taste.
- Garnish & Serve: Spoon the chilled relish into a shallow serving bowl. Generously scatter the chopped toasted pistachios over the top for a mix of textures. Arrange the fresh mint leaves artfully on one side for a vibrant color contrast before presenting this delightful relish.
Notes
For a faster method, serve immediately but flavors deepen with at least 30 minutes of chilling. Reduce sugar by 0.25 to 0.5 cup for a less sweet taste. If too watery, pulse in more cranberries; if too bitter, add more sugar gradually. Organic produce is recommended for purest taste.
