- 200g (7oz) Orzo Pasta
- 1 Tbsp (15ml) Olive Oil
- 1 Small Onion, diced
- 2 Garlic Cloves, minced
- 250ml (1 cup) Vegetable Broth
- 250ml (1 cup) Almond Milk
- 100g (3.5oz) Mozzarella Cheese
- 80g (½ cup) Sun-Dried Tomatoes, chopped
- 1 Tbsp (15g) Fresh Basil, chopped
- 1 tsp (5ml) Lemon Zest
- Salt and Pepper, to taste
- 2 Tbsp (30g) Pine Nuts, toasted
- Fresh Basil Leaves, for garnish
Instructions
- Brown Sausage: Sauté sliced sausage in olive oil until browned.
- Sauté Aromatics: Sauté diced onion until translucent, then add garlic and cook briefly.
- Toast Orzo: Toast orzo in the skillet for 2 minutes.
- Simmer Orzo: Add broth and simmer until orzo is al dente, about 8 minutes.
- Create Creamy Base: Stir in milk and simmer until thickened.
- Melt Mozzarella: Stir in mozzarella until melted and smooth.
- Infuse Flavors: Gently fold in sun-dried tomatoes, basil, and lemon zest.
- Combine & Heat: Return sausage to skillet and heat through.
- Season & Serve: Season with salt and pepper, garnish, and serve.
Notes
For a dairy-free option, use almond milk. Halal options are available for sausage and cheese. Toasting the orzo enhances its flavor.
