  • 200g (7oz) Orzo Pasta
  • 1 Tbsp (15ml) Olive Oil
  • 1 Small Onion, diced
  • 2 Garlic Cloves, minced
  • 250ml (1 cup) Vegetable Broth
  • 250ml (1 cup) Almond Milk
  • 100g (3.5oz) Mozzarella Cheese
  • 80g (½ cup) Sun-Dried Tomatoes, chopped
  • 1 Tbsp (15g) Fresh Basil, chopped
  • 1 tsp (5ml) Lemon Zest
  • Salt and Pepper, to taste
  • 2 Tbsp (30g) Pine Nuts, toasted
  • Fresh Basil Leaves, for garnish

Instructions

  1. Brown Sausage: Sauté sliced sausage in olive oil until browned.
  2. Sauté Aromatics: Sauté diced onion until translucent, then add garlic and cook briefly.
  3. Toast Orzo: Toast orzo in the skillet for 2 minutes.
  4. Simmer Orzo: Add broth and simmer until orzo is al dente, about 8 minutes.
  5. Create Creamy Base: Stir in milk and simmer until thickened.
  6. Melt Mozzarella: Stir in mozzarella until melted and smooth.
  7. Infuse Flavors: Gently fold in sun-dried tomatoes, basil, and lemon zest.
  8. Combine & Heat: Return sausage to skillet and heat through.
