Description

  • Cucumbers (500g / 1lb 10oz): Thinly sliced, skin on.
  • Plain Greek Yogurt (200g / 7oz): Full-fat recommended.
  • Lemon Juice (30ml / 2 Tbsp): Freshly squeezed.
  • Olive Oil (15ml / 1 Tbsp): Extra-virgin.
  • Garlic (1 clove): Minced.
  • Fresh Dill (15g / 2 Tbsp): Finely chopped.
  • Kosher Salt (2g / ½ tsp)
  • Black Pepper (1g / ¼ tsp): Freshly ground.
  • Honey (5ml / 1 tsp – optional)
  • Red Onion (20g / ¼ small): Thinly sliced.
  • Smoked Paprika (Pinch)
  • Fresh Dill Sprig (2cm / ½ in)

Instructions

  1. Prepare Cucumbers: Slice cucumbers, salt, and let sit for 10 minutes to remove excess water.
  2. Make Dressing: Whisk together yogurt, lemon juice, olive oil, garlic, dill, salt, pepper, and honey.
  3. Dry & Combine: Pat cucumbers dry, then toss with red onion and dressing.
  4. Chill & Meld: Refrigerate for 20-30 minutes to allow flavors to combine.
  5. Plate & Garnish: Serve chilled, garnished with smoked paprika and a dill sprig.
