Ingredients
- Cucumbers (500g / 1lb 10oz): Thinly sliced, skin on.
- Plain Greek Yogurt (200g / 7oz): Full-fat recommended.
- Lemon Juice (30ml / 2 Tbsp): Freshly squeezed.
- Olive Oil (15ml / 1 Tbsp): Extra-virgin.
- Garlic (1 clove): Minced.
- Fresh Dill (15g / 2 Tbsp): Finely chopped.
- Kosher Salt (2g / ½ tsp)
- Black Pepper (1g / ¼ tsp): Freshly ground.
- Honey (5ml / 1 tsp – optional)
- Red Onion (20g / ¼ small): Thinly sliced.
- Smoked Paprika (Pinch)
- Fresh Dill Sprig (2cm / ½ in)
Instructions
- Prepare Cucumbers: Slice cucumbers, salt, and let sit for 10 minutes to remove excess water.
- Make Dressing: Whisk together yogurt, lemon juice, olive oil, garlic, dill, salt, pepper, and honey.
- Dry & Combine: Pat cucumbers dry, then toss with red onion and dressing.
- Chill & Meld: Refrigerate for 20-30 minutes to allow flavors to combine.
- Plate & Garnish: Serve chilled, garnished with smoked paprika and a dill sprig.
