  • 2 Tbsp (30g) Unsalted Butter
  • 3 Cloves Garlic: minced
  • 240ml (1 cup) Heavy Cream
  • 100g (3.5oz) Cream Cheese: softened
  • 60g (2oz) Parmesan Cheese: grated
  • 120ml (½ cup) Vegetable Broth: low-sodium
  • ¼ tsp (1.25ml) Nutmeg: freshly grated
  • 1 tsp (5ml) Lemon Zest
  • ½ tsp (2.5ml) Smoked Paprika (optional)
  • 300g (10.5oz) Zucchini: spiralized into noodles
  • 1 Tbsp (15g) Almonds: toasted, sliced
  • 1 Tbsp (5g) Parsley: chopped
  • Olive Oil: for drizzling

Instructions

  1. Prepare Chicken: Season chicken strips with salt and pepper.
  2. Sear Chicken: Sear chicken in olive oil and butter until cooked through.
  3. Sauté Garlic: Sauté minced garlic until fragrant.
  4. Make Alfredo Base: Whisk in heavy cream and broth; melt in cream cheese.
  5. Infuse with Flavor: Stir in Parmesan, paprika (if using), nutmeg, and lemon zest.
  6. Thicken Sauce: Simmer sauce for 5-7 minutes, stirring occasionally.
