- 1 Large Onion, diced
- 2 Carrots, diced
- 2 Celery Stalks, diced
- 3 Garlic Cloves, minced
- 4 cups (960ml) Low-Sodium Vegetable Broth
- 250ml (1 cup) Heavy Cream
- 100g (3.5oz) Grated Parmesan Cheese
- 1 tsp (5ml) Dried Oregano
- ½ tsp (2.5ml) Dried Thyme
- Salt and Pepper, to taste
- 1 Large Red Bell Pepper
- 2 tbsp (30ml) Olive Oil (for roasting pepper)
- 1 tbsp (15ml) Unsalted Butter (for pepper)
- 1 tbsp (15ml) Heavy Cream (for pepper)
- Pinch of Smoked Paprika
- 1 tbsp (15ml) Olive Oil (for sage)
- 5 Fresh Sage Leaves
- 2 tbsp (30g) Toasted Pine Nuts
- Fresh Basil Leaves, torn
Instructions
- Roast Red Pepper: Broil pepper until blackened, steam, peel, and blend with butter, cream, and paprika.
- Brown Sausage: Cook sliced sausage in olive oil until browned and crispy.
- Sauté Vegetables: Sauté onion, carrots, and celery in sausage fat until softened, then add garlic.
- Simmer Soup Base: Add broth, oregano, and thyme; simmer for 15 minutes.
- Create Creamy Texture: Stir in cream and Parmesan cheese until smooth.
- Combine & Heat: Return sausage to pot and heat through.
- Fry Sage: Fry sage leaves in oil until crisp.
- Plate & Garnish: Ladle soup, swirl in pepper cream, and garnish with sage, pine nuts, and basil.
Notes
For a richer flavor, use high-quality, halal-certified Italian sausage and freshly grated Parmesan cheese. Roasting the red pepper intensifies its sweetness.
