- 150g (5.3oz) Cooked Shrimp, Peeled, Deveined and Roughly Chopped: Good quality, pre-cooked
- 1 Small Garlic Clove, Minced: Adjust to taste
- 1 tbsp (15ml) Fresh Lemon Juice: Always use fresh
- Salt and Freshly Ground Black Pepper, to Taste
- 1 Large Red Bell Pepper: For roasting and swirling
- 1 tsp Smoked Paprika: Adds smoky flavor
- 1 tbsp (15ml) Olive Oil (for the swirl)
- Pinch of Cayenne Pepper (Optional)
- 2 tbsp (30ml) Lemon-Infused Olive Oil, for Drizzling
- 2 tbsp (30g) Pine Nuts, Toasted and Roughly Chopped
- 1 tbsp (6g) Fresh Chives, Finely Chopped
Instructions
- Roast Pepper: Roast red pepper at 220°C (425°F) for 15-20 minutes, until blackened.
- Steam and Peel: Steam pepper in a bowl for 5 minutes, then peel, remove seeds.
- Make Swirl: Blend pepper with paprika, olive oil, and cayenne (optional) until smooth.
- Prepare Spinach: Blanch spinach for 1 minute, ice bath, squeeze dry, and chop.
- Combine Base: Beat cream cheese, yogurt, mozzarella, lemon juice, garlic, salt, and pepper.
- Fold in Seafood: Gently fold in spinach and shrimp.
- Create Swirl: Spoon dip into bowl, add pepper puree, and swirl gently.
- Chill: Refrigerate for at least 30 minutes.
- Garnish and Serve: Drizzle with olive oil, sprinkle with pine nuts and chives.
