  • 100g (3.5oz) Grated Halal Mozzarella Cheese: Pre-grated or freshly grated
  • 200g (7oz) Fresh Spinach Leaves, Blanched, Squeezed Dry and Coarsely Chopped: Ensure thorough squeezing
  • 150g (5.3oz) Cooked Shrimp, Peeled, Deveined and Roughly Chopped: Good quality, pre-cooked
  • 1 Small Garlic Clove, Minced: Adjust to taste
  • 1 tbsp (15ml) Fresh Lemon Juice: Always use fresh
  • Salt and Freshly Ground Black Pepper, to Taste
  • 1 Large Red Bell Pepper: For roasting and swirling
  • 1 tsp Smoked Paprika: Adds smoky flavor
  • 1 tbsp (15ml) Olive Oil (for the swirl)
  • Pinch of Cayenne Pepper (Optional)
  • 2 tbsp (30ml) Lemon-Infused Olive Oil, for Drizzling
  • 2 tbsp (30g) Pine Nuts, Toasted and Roughly Chopped
  • 1 tbsp (6g) Fresh Chives, Finely Chopped

Instructions

  1. Roast Pepper: Roast red pepper at 220°C (425°F) for 15-20 minutes, until blackened.
  2. Steam and Peel: Steam pepper in a bowl for 5 minutes, then peel, remove seeds.
  3. Make Swirl: Blend pepper with paprika, olive oil, and cayenne (optional) until smooth.
  4. Prepare Spinach: Blanch spinach for 1 minute, ice bath, squeeze dry, and chop.
  5. Combine Base: Beat cream cheese, yogurt, mozzarella, lemon juice, garlic, salt, and pepper.
  6. Fold in Seafood: Gently fold in spinach and shrimp.
  7. Create Swirl: Spoon dip into bowl, add pepper puree, and swirl gently.
  8. Chill: Refrigerate for at least 30 minutes.
  9. Garnish and Serve: Drizzle with olive oil, sprinkle with pine nuts and chives.
