Instructions
- Sauté Vegetables: Heat oil, sauté onion, carrots, and celery for 5-6 minutes until softened.
- Bloom Garlic: Stir in garlic, cook for 30 seconds.
- Add Hearty Veggies: Add cauliflower, potatoes, and peas; toss to coat.
- Simmer Soup: Pour in broth and oat milk, add thyme, rosemary, salt, and pepper; simmer gently.
- Cook Until Tender: Cover and simmer for 15-20 minutes, until vegetables are tender.
