  • 0.5 tsp + extra salt
  • 0.25 tsp black pepper
  • 150g plain full-fat yogurt
  • 2 cloves garlic, minced
  • 1 Tbsp lemon juice
  • 1 tsp lemon zest
  • A pinch fresh parsley, chopped

Instructions

  1. Prep & Season: Preheat oven to 425°F. Toss cauliflower with 2 Tbsp olive oil, salt, and pepper.
  2. Breading Station: Set up flour, egg, and panko-Parmesan-paprika mixture.
  3. Bread Cauliflower: Dredge in flour, dip in egg, then coat with panko mixture.
  4. Bake: Arrange on a baking sheet and bake for 20-25 minutes, flipping halfway.
  5. Make Sauce: Whisk yogurt, garlic, lemon juice, zest, 1 tsp olive oil, and salt.
  6. Serve: Let rest, drizzle with sauce, and garnish with parsley.
