- 2 Tbsp + 1 tsp olive oil
- 60g all-purpose flour
- 1 large egg, beaten
- 100g panko breadcrumbs
- 30g grated Parmesan cheese
- 1 tsp smoked paprika
- 0.5 tsp dried thyme
- 0.5 tsp + extra salt
- 0.25 tsp black pepper
- 150g plain full-fat yogurt
- 2 cloves garlic, minced
- 1 Tbsp lemon juice
- 1 tsp lemon zest
- A pinch fresh parsley, chopped
Instructions
- Prep & Season: Preheat oven to 425°F. Toss cauliflower with 2 Tbsp olive oil, salt, and pepper.
- Breading Station: Set up flour, egg, and panko-Parmesan-paprika mixture.
- Bread Cauliflower: Dredge in flour, dip in egg, then coat with panko mixture.
- Bake: Arrange on a baking sheet and bake for 20-25 minutes, flipping halfway.
- Make Sauce: Whisk yogurt, garlic, lemon juice, zest, 1 tsp olive oil, and salt.
- Serve: Let rest, drizzle with sauce, and garnish with parsley.
Notes
For extra crispiness, ensure the cauliflower is dry and press the breadcrumb mixture firmly onto each floret.
