Description

These Crispy Garlic-Parmesan Chicken Cutlets feature tender chicken with a melted cheese center and a flavorful garlic-Parmesan glaze. They’re surprisingly easy to make and deliver a satisfying crunch in every bite.


Ingredients

  • 400g chicken breasts, sliced into ½ cm cutlets
  • 100g all-purpose flour, with 5g salt
  • 2 large eggs, whisked with 15ml water
  • 150g panko breadcrumbs, with 50g Parmesan, 5g garlic powder, and 5g oregano
  • 30ml unsalted butter, for brushing
  • 100g cream cheese, softened
  • 30g Parmesan cheese, for filling
  • 1 clove garlic, minced
  • 5ml lemon juice
  • 15ml chopped parsley
  • 30ml melted butter, for glaze
  • 15ml Parmesan cheese, for glaze
  • 5ml garlic powder, for glaze
  • Optional: ¼ tsp smoked paprika
  • Fresh parsley and lemon zest, for garnish

Instructions

  1. Prep Chicken: Pound chicken to ¼ inch thickness and season with salt and pepper.
  2. Make Filling: Combine cream cheese, Parmesan, garlic, lemon juice, and parsley.
  3. Stuff Cutlets: Slice a pocket in each cutlet and fill with cream cheese mixture.
  4. Bread Cutlets: Dredge in flour, dip in egg, then coat with panko mixture.
  5. Bake: Bake at 400°F for 12 minutes, flip, brush with butter, and bake 8-10 minutes.
  6. Glaze: Whisk glaze ingredients and brush onto cutlets during the last 3 minutes.
  7. Rest & Serve: Let rest, remove toothpicks, slice, drizzle with glaze, and garnish.

Notes

For extra crispiness, ensure the chicken is dry before breading and don’t overcrowd the baking sheet.
