  • 15 ml (1 tbsp) Lime Juice: Freshly squeezed is best.
  • 5 g (1 tsp) Lime Zest: Use a microplane.
  • 120 g (1/2 cup) Ripe Avocado, Mashed: Should yield to pressure.
  • 2 Jalapeños, Sliced: Adjust seeds for heat level.
  • 1 Sheet (275 g) Puff Pastry, Thawed: All-butter preferred.
  • 50 g (1/2 cup) Panko Breadcrumbs: For a crispy coating.
  • 30 g (2 tbsp) Parmesan Cheese, Grated: Freshly grated is best.
  • 15 g (1 tbsp) Parsley, Chopped: Fresh parsley for color.
  • 5 g (1 tsp) Smoked Paprika: Adds smoky flavor.
  • 1 Egg, Beaten: For egg wash.
  • Salt and Pepper to Taste: Season to preference.
  • Cilantro Leaves for Garnish: For fresh garnish.
  • Lime Zest for Garnish: Enhances aroma.

Instructions

  1. Preheat & Prep: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Make Crema: Combine avocado, cream cheese, cheddar, sour cream, lime juice, and zest; season. Reserve half for drizzling.
  3. Cut Pastry: Cut puff pastry into 12 strips.
  4. Assemble Twists: Roll pastry strips around jalapeño and filling.
  5. Coat in Panko: Toss twists in panko, Parmesan, paprika, and butter.
  6. Egg Wash & Bake: Brush with egg wash and bake for 12-15 minutes.
