- 150g (1 cup) All-Purpose Flour
- 1 tsp (5g) Baking Powder
- 1/2 tsp (2.5g) Salt
- 1/4 tsp (1g) Black Pepper
- 1 Large Egg, beaten
- 120ml (1/2 cup) Cold Water
- 2 tbsp (30ml) Vegetable Oil
- 100g (3.5oz) Cream Cheese, softened
- 50g (1.75oz) Cheddar Cheese, shredded
- 1 Small Jalapeño, diced (seeds removed)
- 1 tbsp (15g) Cilantro, chopped
- 1/4 tsp (1g) Smoked Paprika
- 100g (3/4 cup) Panko Breadcrumbs
- 2 tbsp (30ml) Vegetable Oil for frying
- 2 tbsp (30g) Plain Yogurt
- 1 tsp (5ml) Lime Juice
- 1 tsp (5g) Lime Zest
- Cilantro Leaves, for garnish
Instructions
- Make Cheese Center: Combine cream cheese, cheddar, jalapeño, cilantro, paprika, and salt; chill for 10 minutes.
- Prepare Okra Batter: Whisk flour, baking powder, salt, and pepper. Add egg, water, and oil; fold in okra.
- Assemble Patties: Divide batter, flatten, fill with cheese, and seal.
- Coat in Panko: Press patties into panko breadcrumbs.
- Fry to Perfection: Fry in oil until golden brown and crispy.
- Rest and Drain: Drain on paper towels and rest for 5 minutes.
- Make Lime-Yogurt Drizzle: Whisk yogurt, lime juice, and zest.
- Plate and Garnish: Drizzle with sauce and garnish with cilantro.
Notes
Chilling the cheese mixture prevents it from oozing out during frying. Using cold water in the batter helps develop gluten for a crispier patty.
