- 30ml (2 tbsp) extra-virgin olive oil
- 5g (1 tsp) sea salt
- 2.5g (½ tsp) black pepper
- 3g (1 tsp) smoked paprika
- 1g (½ tsp) ground cumin
- 1g (½ tsp) garlic powder
- 2g (1 tsp) lemon zest
- 30g (2 tbsp) almond flour
- 15g (2 tbsp) nutritional yeast
- 8g (1 tbsp) toasted sesame seeds
- 10g (1 tbsp) pomegranate arils
- 30ml (2 tbsp) tahini
- 15ml (1 tbsp) warm water
- 5ml (1 tsp) maple syrup
- 5ml (1 tsp) lemon juice
- Pinch of sumac (optional)
Instructions
- Preheat & Prep: Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Season Cauliflower: Toss cauliflower with olive oil, salt, pepper, paprika, cumin, garlic powder, and lemon zest.
- Coat with Flour: Combine almond flour and nutritional yeast; coat seasoned cauliflower evenly.
- Roast to Crisp: Spread cauliflower on baking sheet and roast for 33-38 minutes, flipping halfway through.
- Make Tahini Drizzle: Whisk together tahini, water, maple syrup, and lemon juice until smooth.
- Rest & Drizzle: Let cauliflower rest for 5 minutes, then drizzle with tahini sauce.
- Garnish & Serve: Sprinkle with sesame seeds, pomegranate arils, and sumac (if using). Serve immediately.
Notes
For optimal crispness, ensure cauliflower florets are spaced evenly on the baking sheet. Adjust tahini drizzle consistency with a drop of water if needed.
