This homemade Crispy Shake and Bake Chicken is a crunchy, golden delight, perfect for busy families. Made with bone-in chicken, Panko, and savory spices.
Ingredients
- Bone-in, skin-on chicken pieces (drumsticks, thighs, or breasts) – about 2-3 lbs (approx. 1-1.4 kg)
- All-purpose flour (1/2 cup / 60g)
- Panko breadcrumbs (1.5 cups / 90g)
- Seasoning Blend: 2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp dried oregano, 1/2 tsp salt, 1/4 tsp black pepper
- Melted unsalted butter or olive oil (1/4 cup / 60ml)
Instructions
- Preheat Oven & Prep Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. This setup promotes air circulation for extra crispy chicken.
- Dry & Dredge Chicken: Pat your chicken pieces very dry with paper towels – this helps the coating adhere beautifully. In a shallow dish, dredge each piece in flour, shaking off any excess.
- Butter Dip: Dip each floured chicken piece into the melted butter or olive oil, ensuring it’s fully coated. Let any excess drip off before moving to the next step.
- The Shake & Bake: In a large resealable bag, combine the Panko breadcrumbs and all of your seasoning blend. Add one chicken piece at a time, seal the bag, and shake until it’s fully coated. Press gently to help the coating stick.
- Bake to Crispy Perfection: Arrange the coated chicken on the prepared wire rack, making sure no pieces are touching. Bake for 30-45 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is beautifully golden brown and crispy.
Notes
For a spicy kick, add 1/2 tsp cayenne pepper to the seasoning blend. For a gluten-free option, use gluten-free flour and gluten-free breadcrumbs. For dairy-free, use olive oil instead of butter. Add 1/2 tsp dried thyme or rosemary for an herb boost. Boneless, skinless chicken may require less baking time and could be less juicy. Use a meat thermometer for perfect results every time, ensuring the internal temperature reaches 165°F (74°C).
