- 200g (7oz) Mozzarella Cheese: cut into 2cm (¾-inch) cubes
- 8 Slices (≈120g / 4oz) Smoked Turkey Breast: thinly sliced
- ½ Cup (60g) All-Purpose Flour
- 2 Large Eggs: beaten
- 1 Cup (120g) Panko Breadcrumbs
- ¼ Cup (30g) Grated Parmesan Cheese
- 2 tbsp (30ml) Olive Oil
- 1 Clove Garlic: minced
- 1 tsp (5g) Fresh Rosemary: finely chopped
- 1 tsp (5g) Lemon Zest
- Salt and Pepper: to taste
- 1 tbsp (5g) Toasted Pine Nuts (optional)
- 1 tbsp (5g) Fresh Parsley (optional)
Instructions
- Prep and Preheat: Preheat oven to 200°C (400°F) and line a baking sheet.
- Wrap Mozzarella: Wrap each mozzarella cube with turkey and secure with a toothpick.
- Bread Bites: Coat bites in flour, egg, then panko-Parmesan mixture.
- Bake: Arrange on baking sheet, oil lightly, and bake for 12-15 minutes.
- Make Drizzle: Warm oil, cook garlic and rosemary, add zest, salt, and pepper.
- Drizzle & Garnish: Drizzle bites with sauce and garnish with pine nuts and parsley.
- Serve: Serve immediately for best results.
Notes
For maximum crispiness, use fresh panko breadcrumbs and avoid overcrowding the baking sheet. Feel free to experiment with different cheeses or herbs in the drizzle.
