- 1 cup red bell pepper, sliced
- 1 cup green bell pepper, sliced
- 1 cup onion, sliced
- 3 tbsp low-sodium soy sauce
- 2 tbsp white miso paste
- 2 tbsp honey
- 1 tbsp rice vinegar
- 2 tsp grated ginger
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 0.5 tsp black pepper
- 0.25 tsp red-pepper flakes (optional)
- 2 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp water
- 1 tbsp toasted sesame seeds, for garnish
- 2 scallions, sliced, for garnish
Instructions
- Prepare Beef: Slice beef, season with pepper and optional red pepper flakes.
- Make Glaze: Whisk together soy sauce, miso, honey, vinegar, ginger, garlic, and sesame oil.
- Layer Ingredients: Layer beef, peppers, and onion in the crock pot.
- Slow Cook: Pour glaze over ingredients and cook on low for 6-8 hours or high for 3-4 hours.
- Thicken Sauce: Stir in cornstarch slurry and water, cook on high for 20-30 minutes.
- Rest & Garnish: Let rest for 5 minutes, garnish with sesame seeds and scallions.
Notes
For best results, slice the beef against the grain. Using halal-certified miso paste is recommended if needed.
