- 1.5 kg (3.3 lb) Beef Chuck, cut into 2 cm cubes
- 2 Tbsp (30 g) Olive Oil, divided
- 2 Tbsp (30 g) Coffee-Cocoa Rub (1 Tbsp coffee, 1 Tbsp cocoa, 1 tsp paprika, 1 tsp cumin, 1 tsp salt, 0.5 tsp pepper)
- 1 Large Onion, diced (≈200 g / 7 oz)
- 3 Carrots, sliced (≈300 g / 10 oz)
- 2 Celery Stalks, sliced (≈150 g / 5 oz)
- 3 Garlic Cloves, minced, divided
- 2 Medium Potatoes, cubed (≈400 g / 14 oz)
- 250 ml (1 cup) Low-Sodium Vegetable Broth
- 250 ml (1 cup) Water
- 2 Tbsp (30 ml) Tomato Paste
- 1 tsp (5 g) Dried Thyme
- 1 Bay Leaf
- 1 Tbsp (15 ml) Halal Soy Sauce
- Herb-Garlic Drizzle: 60 ml (¼ cup) Olive Oil, 2 Garlic Cloves, 2 Tbsp Parsley, 1 tsp Lemon Juice, pinch of Salt
Instructions
- Prepare Beef: Dry beef cubes and coat with coffee-cocoa rub; rest for 10 minutes.
- Sear Beef: Sear beef in batches until browned on all sides; transfer to crockpot.
- Sauté Aromatics: Sauté onion, carrots, and celery; add half the garlic during the last minute.
- Combine in Crockpot: Add vegetables to crockpot with beef, potatoes, broth, water, tomato paste, thyme, bay leaf, and soy sauce.
- Slow Cook: Cook on LOW for 8-9 hours or HIGH for 4-5 hours.
- Prepare Drizzle: Whisk together drizzle ingredients.
- Finish & Serve: Stir in half the drizzle; remove bay leaf; adjust seasoning; ladle and drizzle.
Notes
For best results, use halal-certified beef and soy sauce. The coffee rub adds a unique depth of flavor.
