- 1.2 kg (2.6 lb) boneless skinless chicken thighs, cut into 4-inch pieces
- 240 ml (1 cup) low-sodium soy sauce
- 120 ml (0.5 cup) apple cider vinegar
- 120 ml (0.5 cup) alcohol-free bourbon extract
- 240 ml (1 cup) vegetable broth
- 100 g (0.5 cup) packed brown sugar
- 60 ml (0.25 cup) ketchup
- 30 ml (2 Tbsp) vegetarian Worcestershire sauce
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp smoked paprika
- 0.5 tsp black pepper
- 1 Tbsp cornstarch mixed with 2 Tbsp water
- 1 Tbsp vegetable oil
- 2 Tbsp toasted sesame seeds
- 2 green onions, sliced
- 1 lime, wedges
Instructions
- Prepare Chicken: Pat chicken thighs dry and season with pepper.
- Sear Chicken: Sear chicken in oil until browned, working in batches.
- Whisk Sauce: Combine soy sauce, vinegar, bourbon extract, broth, sugar, ketchup, Worcestershire sauce, garlic powder, onion powder, paprika, and pepper.
- Combine & Crockpot: Pour sauce over chicken in crockpot and submerge.
- Slow Cook: Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Thicken Sauce: Stir in cornstarch slurry and cook on HIGH for 5-7 minutes.
- Rest & Serve: Rest for 5 minutes, garnish, and serve.
Notes
Searing the chicken is key for developing flavor. A squeeze of lime juice brightens the dish. For best results, use chicken thighs.
