  • 500g (1lb 2oz) beef chuck, cubed
  • 30ml (2 Tbsp) olive oil
  • 150g (5oz) onion, diced
  • 3 cloves garlic, minced
  • 70g (2½oz) carrot, diced
  • 50g (1½oz) celery, diced
  • 30g (2 Tbsp) tomato paste
  • 5g (1 tsp) smoked paprika
  • 2g (½ tsp) ground cumin
  • 0.5g (¼ tsp) cayenne pepper (optional)
  • 400ml (1⅔ cup) low-sodium vegetable broth
  • 300g (10½oz) penne pasta
  • 200g (7oz) sharp cheddar cheese, shredded
  • 150g (5oz) mozzarella cheese, shredded
  • 2g (½ tsp) sea salt
  • 1g (¼ tsp) black pepper
  • 15ml (1 Tbsp) harissa paste (mild)
  • 30g (2 Tbsp) toasted pine nuts (garnish)
  • Fresh basil leaves (garnish)
  • Parmesan cheese (optional garnish)
  • 15ml (1 Tbsp) extra-virgin olive oil (garnish)

Instructions

  1. Sear the Beef: Brown beef in olive oil, seasoning with salt and pepper. Work in batches for a good sear.
  2. Sauté Aromatics: Sauté onion, carrot, and celery in the same skillet. Add garlic, tomato paste, spices, and harissa paste; cook until fragrant.
  3. Combine in Crockpot: Transfer beef and vegetable mixture to the crockpot. Add vegetable broth and stir.
  4. Slow Cook: Cook on low for 6-7 hours or high for 3-4 hours, until beef is tender.
  5. Add Pasta & Cheese: Add penne, cheddar, and mozzarella; cook for 20-25 minutes until pasta is al dente and cheese is melted.
  6. Thicken Sauce: If needed, thicken with a cornstarch slurry.
  7. Rest & Serve: Let rest for 10 minutes before serving.

Notes

Using a good quality beef chuck with some marbling will result in the most tender and flavorful results. Don’t skip the searing step, as it builds a rich, savory flavor.
