- 6 cloves garlic, minced (30 g / 1 oz)
- 1 tsp (2 g) smoked paprika
- 0.5 tsp (1 g) ground cumin
- 0.25 tsp (0.5 g) black pepper
- 0.5 tsp (2 g) salt
- 0.25 cup (60 ml) low-sodium vegetable broth
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (15 ml) olive oil
- 1 onion, thinly sliced (100 g / 3.5 oz)
- 0.5 cup (75 g) baby carrots, halved
- 2 tbsp (6 g) parsley, chopped
- 0.5 lemon, zested
Instructions
- Prepare Chicken: Season chicken with salt, pepper, paprika, and cumin.
- Sear Chicken: Sear chicken in olive oil and butter until browned.
- Sauté Aromatics: Sauté garlic and onion until fragrant.
- Deglaze Pan & Sauce: Add broth and lemon juice, scraping up browned bits.
- Slow Cook: Add carrots and cook on low for 6-7 hours or high for 3-4 hours.
- Thicken Sauce (Optional): Thicken sauce with a cornstarch slurry.
- Serve & Garnish: Garnish with parsley and lemon zest.
Notes
