This Crockpot Sweet Chili Chicken delivers tender, juicy chicken thighs in a sweet, spicy, and tangy sauce. It’s a flavorful and easy meal perfect for busy weeknights.

- 1.2 kg (2.5 lb) boneless skinless chicken thighs (halal)
- 240 ml (1 cup) sweet chili sauce (halal-certified)
- 30 ml (2 Tbsp) low-sodium soy sauce
- 15 ml (1 Tbsp) rice vinegar
- 15 ml (1 Tbsp) honey
- 2 cloves garlic, minced
- 5 ml (1 tsp) freshly grated ginger
- 5 g (1 tsp) red pepper flakes
- 2 kafur lime leaves (optional)
- 120 ml (½ cup) vegetable broth
- 15 ml (1 Tbsp) cornstarch mixed with 30 ml (2 Tbsp) cold water
- 15 ml (1 Tbsp) sesame oil
- 30 ml (2 Tbsp) fresh cilantro, chopped
- 15 g (1 Tbsp) toasted sesame seeds
- 1 lime, cut into wedges
Instructions
- Prepare Chicken: Pat chicken dry and season lightly.
- Sear Chicken: Sear chicken for 2-3 minutes per side to build flavor.
- Whisk Sauce: Combine sauce ingredients in a bowl.
- Combine & Cook: Pour sauce over chicken in crockpot and cook on Low for 6-7 hours or High for 3-4 hours.
- Thicken Sauce: Stir in cornstarch slurry and cook uncovered on High for 15 minutes.
- Shred & Finish: Shred chicken and return to pot, coating with sauce.
- Serve & Garnish: Plate with sauce, sesame oil, cilantro, sesame seeds, and lime wedges.
Notes
Searing the chicken adds extra flavor. Adjust red pepper flakes to control spice level. Halal-certified ingredients can be used.
